I wish Bestia was consistent. I've been here on three separate occasions partly because it's so freaking difficult to get a reservation and they make you wait forever (and I hate waiting), but also because I wasn't very impressed the first time. My second visit was in April to celebrate a friend's birthday and the fractional food was just absolutely mind blowing! Then came today... it's my birthday week and I brought my SO who hasn't been to this establishment yet Well... the food was disappointing. Ambiance I can tolerate the ambiance of this place which is basically a typical DTLA, warehouse vibe. It's very loud in here, so you'll find yourself nodding a lot when the waiter/waitress is explaining the dish to you. I can tolerate, but def not my favorite especially given the price. Service Service is ok. I'd even say that it's subpar on some days lifeless as in you can't expect a very attentive service given how loud and distracting the whole place is. Also, they will not offer anything complimentary for birthdays/celebration. I always think it adds a nice touch when restaurants are willing to offer up something nice to help you celebrate.(a lot of fine dining establishment gives "free gifts" to their patrons ie Jean gorge, Le Cirque, etc.) so it wasn't fun when we asked if they can provide a comp dessert for a friend's bday and they said "we'll put a candle on a dessert if you pay for it :)" nice. Food So the reason why I came back despite my so-so experience quieting the first time was the steak tartare. I was really impressed during my second visit, so I definitely had to get it despite the hefty price tag ($22)... so I was disappointed when It was finally served drenched in sauce. I could barely taste the meat. I guess I got unlucky this time. What a shame. SALAD: Genevieve's little gems - 5 stars walnut vinaigrette, ricotta salata, radish, shallots, walnuts, shaved parm, and herbs. Deliciously cool, crunchy salad with a nice pinch of salt to bring out the flavors of the fresh herbs and tangy vinaigrette. Mussels and Clams: 5 stars! I am aware of the fact that it is very difficult to find mussels that are perfectly cooked, and properly cleaned. This mussel and clam dish comes served in a spicy 'nduja sausage/fennel seed/lemon sauce. It was spicier than I expected, but it did not burn my mouth (although, I do not mind spicy food). My friend Nita thought it was a little spicy, but kept eating the dish, so I'd say it's a spicy level of 3 out of 10? Don't let the heat deter you from ordering this wonderful dish! It comes with 2 giant slices of toasted bread and it is simply delicious! Mussels are melt in your mouth, and the clams are perfectly tender. This was perhaps the best dish of the night. PASTA: Trofie all' Amatriciana - 5 stars. this pasta dish consists of italian bacon, cheery tomato, pecorino, small daresay dollops of green garlic pistachio pesto, sprinkled with tiny, burnt bread crumbs. The burnt bread crumbs when mixed with the sauce and pasta mimic the flavor and texture of the (almost) burnt edges of pepperoni or bubbly crust of a wood fired pizza. Very good, and a great dish to share! Slow Roasted Lamb Neck - 5 stars. OK, so this lamb neck is served on the bone, and the meat is fall off the (axis/C1?) bone tender. It's served with lettuce gem cups and fresh herbs, and a side of smoked anchovy creme fraiche! The idea is that you make your own lettuce wraps. This worked out well between my friend and I because she was able to get some of the tender inner meat, and I was able to eat some of the crispy, outside meat (bark) that contained the rub. The cool, crispy lettuce cups was a nice contrast to the roasted lamb flavor. The creme fraiche sauce tied the two ingredients together, and the dish was enough to satisfy us both - even though by then we had 2 cocktails, salad, pasta, wine and shellfish, but I digress
